I’ve been flipping hungrily through Sohla El-Waylly’s new book, Start Here, and while there is SO much I love about this book, I gravitated toward the egg chapter in particular. This chapter is really (cleverly) about managing heat because few foods are so obviously responsive to heat as eggs are. When beaten eggs hit a hot pan they set instantly. Eggs heated too quickly or carelessly curdle. This is obvious, but it doesn’t translate perfectly into life (or cooking) advice.
