We just dump the bones into a stock pot, add veggies (carrot, onion, celery) and just enough water to cover the bones. Then gently simmer for several hours, topping up the water as needed if it gets too low (the water level should stay right at the level of the bones/veggies).
This is a great project to do when you plan to be home all day. You don't need to watch the pot—just check on it every 45 minutes or so to make sure it's not boiling and that the water isn't getting low. It makes the whole house smell like lovely chicken goodness.
